Introduction

Today, I am excited to share a recipe that holds a special place in my heart. This dish brings back memories of crisp autumn days, cozy nights by the fire, and the earthy flavors of the season. I hope you enjoy creating and savoring this unique and comforting dish as much as I do.

Ingredients

  • butternut squash (500g, peeled and diced)
  • chestnuts (200g, peeled and roasted)
  • fresh sage leaves (10g)
  • blue cheese (100g, crumbled)
  • honey (2 tbsp)
  • ground cinnamon (1 tsp)
  • butter (50g, melted)
  • salt and pepper to taste

Kitchen Tools

  • chef’s knife
  • cutting board
  • oven
  • baking sheet
  • frying pan
  • mixing bowl

Preparation

Start by preheating your oven to 200°C. Place the diced butternut squash on a baking sheet and drizzle with half of the melted butter. Sprinkle with cinnamon and season with salt. Roast in the oven for 30 minutes or until tender and caramelized.

In a frying pan over medium heat, toast the sage leaves until crispy. Remove and set aside. In the same pan, heat the remaining butter and add the roasted chestnuts. Cook until they are golden brown and fragrant.

In a large mixing bowl, combine the roasted butternut squash, chestnuts, crumbled blue cheese, toasted sage leaves, honey, and a pinch of salt and pepper. Gently toss everything together until well combined.

Tips

For an extra layer of flavor, try adding a drizzle of balsamic glaze or a sprinkle of crushed walnuts over the finished dish. This will enhance the sweetness of the honey and the richness of the blue cheese.

Serving

This dish weighs approximately 1200g once cooked and serves 4 people. Each serving is around 300g, with an estimated calorie count of 350 per portion. Serve this flavorful autumn medley as a side dish or a vegetarian main course with a green salad on the side.

I hope you enjoy making this dish and experimenting with different flavor combinations. Don’t be afraid to get creative and make it your own. Happy cooking!
