Refreshing Summer Strawberry Gazpacho Recipe

My strawberry gazpacho is a unique twist on the classic Spanish chilled soup, combining the sweetness of ripe strawberries with the tanginess of tomatoes and the freshness of cucumber and herbs. It’s a delightful dish that celebrates the abundance of summer produce in a healthy and delicious way.

Ingredients:

  • 500g ripe strawberries
  • 300g tomatoes
  • 1 large cucumber
  • 1 red bell pepper
  • 1 small red onion
  • 2 cloves of garlic
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • a handful of fresh basil leaves
  • to taste

Kitchen Tools:

  • large bowl

Start by washing and roughly chopping the strawberries, tomatoes, cucumber, red bell pepper, and red onion. Peel and smash the garlic cloves. Place all the chopped vegetables and garlic in a blender along with the olive oil, balsamic vinegar, and torn basil leaves. Blend everything until smooth and creamy, adding salt and pepper to taste.

Once the gazpacho is well blended, transfer it to a large bowl and let it chill in the refrigerator for at least an hour to allow the flavors to meld together. When ready to serve, give it a good stir and taste for seasoning, adjusting if needed.

The total weight of the cooked dish is approximately 1200g, with around 4 servings. Each serving weighs about 300g, with an estimated calorie count of 150 per serving.
