Vibrant Dragon Fruit Salad Recipe

Today, I’m excited to share a new recipe that I’ve been experimenting with in the kitchen. This dish was inspired by the vibrant colors of summer and the desire to create something light and refreshing.

Ingredients:

  • dragon fruit (1, peeled and diced)
  • jicama (200g, peeled and julienned)
  • golden beetroot (150g, roasted and cubed)
  • goji berries (50g, soaked in water)
  • pistachios (50g, crushed)
  • mint leaves (a handful, thinly sliced)
  • lime (juice of 1)
  • honey (2 tbsp)
  • olive oil (3 tbsp)
  • sea salt and black pepper (to taste)

Kitchen Tools:

  • chef’s knife
  • cutting board
  • vegetable peeler
  • mixing bowl
  • whisk

Preparation:

Start by preparing all the ingredients as indicated in the list. Peel and dice the dragon fruit, julienne the jicama, roast and cube the golden beetroot, crush the pistachios, and thinly slice the mint leaves. Soak the goji berries in water to soften them.

In a large mixing bowl, combine the dragon fruit, jicama, golden beetroot, goji berries, and mint leaves. In a separate small bowl, whisk together the lime juice, honey, olive oil, sea salt, and black pepper to make the dressing. Pour the dressing over the salad ingredients and toss gently to combine.

Serving:

Once the salad is well coated in the dressing, sprinkle the crushed pistachios on top for a crunchy texture. Serve the salad chilled for a refreshing taste that’s perfect for hot summer days.

Tips:

For an extra burst of flavor, try adding a sprinkle of chili flakes or a pinch of cayenne pepper to the dressing. The heat will complement the sweetness of the fruits and the earthiness of the beets.

At the end of the preparation, the total weight of the dish will be approximately 600g, with 4 servings of 150g each. Each serving is around 200 calories, making this a light and nutritious option for a meal or side dish.
