Ingredients:

  • pork tenderloin (approx. 600g)
  • onions (approx. 200g)
  • apples (approx. 150g)
  • brown sugar
  • balsamic vinegar
  • fresh rosemary
  • salt and pepper
  • olive oil

  • cutting board

To start, preheat your oven to 375°F (190°C). While the oven is heating up, begin by caramelizing the onions. Slice the onions thinly and cook them in a skillet over medium-low heat with a bit of olive oil. Stir occasionally until they are golden brown and caramelized, about 20-25 minutes.

In the meantime, prepare the pork tenderloin by slicing it lengthwise without cutting all the way through, creating a pocket for the stuffing. Season the inside with salt and pepper. Once the onions are caramelized, remove them from the skillet and set aside.

Next, peel and dice the apples into small pieces. In the same skillet used for the onions, add the diced apples, brown sugar, balsamic vinegar, and chopped rosemary. Cook until the apples are tender and the mixture is slightly caramelized, about 5-7 minutes.

Stuff the pork tenderloin with the caramelized onions and apple mixture, then secure the opening with kitchen twine. Place the stuffed pork in a roasting pan and roast in the preheated oven for 25-30 minutes, or until the pork reaches an internal temperature of 145°F (63°C).

Once cooked, remove the pork tenderloin from the oven and let it rest for 5-10 minutes before slicing and serving. The combination of savory pork, sweet caramelized onions, and tart apples creates a mouthwatering dish that is perfect for any occasion.
