Exotic Dragon Fruit Quinoa Bowl with Purple Cauliflower: A Flavorful

Today, I’m excited to share a unique and delicious recipe that I recently created. This dish is perfect for a cozy night in with loved ones or a special treat for yourself. I hope you enjoy making it as much as I did!

Ingredients:

  • purple cauliflower (250g)
  • black quinoa (150g)
  • dragon fruit (1)
  • candied ginger (50g)
  • coconut milk (400ml)
  • vanilla bean (1)
  • maple syrup (50ml)
  • pistachios (50g)

Kitchen Tools:

  • chef’s knife
  • cutting board
  • saucepan
  • wooden spoon
  • fine mesh strainer

To start, chop the purple cauliflower into small florets and rinse the black quinoa under cold water. In a saucepan, combine the coconut milk and vanilla bean (split and scraped) over medium heat. Add the black quinoa and cook until tender, about 15-20 minutes.

While the quinoa is cooking, peel and dice the dragon fruit and chop the candied ginger into small pieces. Once the quinoa is ready, strain any excess liquid and stir in the maple syrup, dragon fruit, and candied ginger.

In a separate pan, toast the pistachios until fragrant, then chop them roughly. Plate the quinoa mixture, top with the purple cauliflower florets, and sprinkle with the toasted pistachios.

This colorful and flavorful dish is sure to impress your taste buds! The combination of textures and tastes will leave you craving more.
