Mango Coconut Chicken: A Flavorful Fusion Recipe!

Today, I’m excited to share with you a unique and flavorful recipe that I recently created. This dish is perfect for a cozy night in or a special gathering with friends. I hope you enjoy making and savoring it as much as I do.

Ingredients:

  • boneless chicken thighs
  • ripe mango
  • brussels sprouts
  • red chili pepper
  • roasted cashews
  • garlic
  • cumin
  • turmeric
  • coconut milk
  • soy sauce
  • rice vinegar
  • lime
  • cilantro for garnish

Kitchen Tools:

  • chef’s knife
  • cutting board
  • skillet
  • wooden spoon
  • grater

I start by thinly slicing the boneless chicken thighs and marinating them with cumin, turmeric, and a splash of soy sauce. Next, I heat a skillet and cook the chicken until golden brown and cooked through. Then, I set it aside and work on the vegetables.

I chop the ripe mango, brussels sprouts, red chili pepper, and garlic cloves. In the same skillet, I sauté the garlic and chili for a minute before adding the brussels sprouts. Once they are slightly caramelized, I toss in the mango and roasted cashews.

To make the sauce, I combine coconut milk, rice vinegar, and the juice of a lime in the skillet. I let it simmer for a few minutes until the flavors meld together. Then, I add the cooked chicken back to the skillet and stir everything to coat in the creamy sauce.

To serve, I plate the dish and garnish it with fresh cilantro for a pop of color and flavor. The combination of tender chicken, sweet mango, crunchy cashews, and creamy coconut sauce is a true explosion of tastes and textures.

This dish weighs approximately 1200g once cooked and serves 4 people. Each serving is around 300g and contains approximately 350 calories.

One unique tip for this recipe is to sprinkle some toasted coconut flakes on top for an extra layer of crunch and tropical flavor.
