Fall Recipe: Roasted Butternut Squash with Spiced Maple Pecans

Today, I’m excited to share a cozy fall recipe that combines the sweetness of roasted butternut squash with the warm, spicy crunch of maple-glazed pecans. This dish is perfect for chilly evenings when you want something comforting and flavorful to warm you up.

Ingredients:

  • 1 medium butternut squash, diced
  • 150g pecans
  • 2 tbsp maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 2 tbsp olive oil

Kitchen Tools:

  • spatula
  • oven

To start, preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. In a large bowl, toss the diced butternut squash with olive oil, cinnamon, nutmeg, and salt until evenly coated. Spread the squash out on the prepared baking sheet and roast for 25-30 minutes, or until tender and slightly caramelized.

While the squash is roasting, mix the pecans with maple syrup in the same bowl you used for the squash. Once the squash is done, remove it from the oven and add the maple-glazed pecans to the baking sheet, stirring gently to combine. Return the sheet to the oven and roast for an additional 10 minutes, or until the pecans are fragrant and slightly sticky.

Once everything is roasted to perfection, remove the baking sheet from the oven and let the dish cool slightly before serving. The combination of sweet butternut squash and spicy maple pecans is absolutely delightful, giving you the perfect balance of flavors and textures in every bite.

This dish weighs approximately 700g in total and serves 4 people. Each serving is around 175g, with an estimated calorie count of 250 per serving.
