  • kiwano melon (1)
  • turmeric powder (1 tsp)
  • coconut milk (200ml)
  • quinoa (150g)
  • fresh cilantro (handful, chopped)
  • lime (1, juiced)
  • red chili (1, sliced)
  • salt (to taste)

I start by peeling and chopping the purple sweet potatoes into small cubes. In a saucepan, I combine the sweet potatoes with coconut milk and turmeric powder, letting them simmer until the potatoes are tender and the flavors meld together beautifully.

Next, I prepare the quinoa according to the package instructions and set it aside to cool slightly. Meanwhile, I use a spiralizer to create fun and curly noodles from the kiwano melon, adding a refreshing and unexpected twist to the dish.

To bring everything together, I toss the cooked quinoa with the sweet potato mixture, adding in the kiwano noodles for a pop of color and crunch.
