Today, I’m excited to share my recipe for mouthwatering stuffed bell peppers. This dish is perfect for a cozy evening at home or a festive dinner with friends. The combination of flavors and textures in this dish is sure to impress even the pickiest eaters.

Ingredients:

Start by preheating your oven to 375°F (190°C). Slice the tops off the bell peppers and remove the seeds and membranes. Place the peppers on a baking sheet lined with parchment paper.

In a mixing bowl, combine the quinoa, black beans, corn, diced tomatoes, cilantro, cumin, chili powder, salt, and pepper. Mix well to combine all the ingredients. Spoon the mixture into the hollowed-out bell peppers, packing it down gently.

Cover the peppers with aluminum foil and bake in the preheated oven for 25-30 minutes. Remove the foil, sprinkle shredded cheddar cheese on top of each pepper, and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.

Once the peppers are done, remove them from the oven and let them cool slightly before serving. The aroma of the spices and cheese melting together is simply irresistible.

This recipe serves 4 people, with each serving weighing approximately 300 grams. Each serving is approximately 350 calories.

One unique tip for this dish is to sprinkle some crushed tortilla chips on top of the cheese before baking for an added crunch and flavor dimension.
