Ingredients

  • purple sweet potatoes (500g)
  • coconut milk (400ml)
  • chicken broth (1 liter)
  • lemongrass (2 stalks)
  • ginger (50g)
  • star anise (3 pods)
  • cinnamon stick (1)
  • coriander seeds (1 tbsp)
  • coconut oil (2 tbsp)

  • potato peeler
  • saucepan
  • wooden spoon

Preparation

To start, peel and chop the purple sweet potatoes into small chunks. In a saucepan, heat the coconut oil over medium heat and add the chopped sweet potatoes. Sauté for a few minutes until they start to soften.

Next, add the coconut milk, chicken broth, lemongrass (lightly crushed), ginger (sliced), star anise, cinnamon stick, and coriander seeds to the saucepan. Bring the mixture to a simmer and let it cook for about 20-25 minutes or until the sweet potatoes are tender.

Once the sweet potatoes are fully cooked, remove the lemongrass, ginger, star anise, and cinnamon stick from the saucepan. Using a hand blender, puree the soup until smooth. Season with salt and pepper to taste.

Tips

For an extra burst of flavor, try adding a squeeze of lime juice before serving. It adds a refreshing zing to the creamy soup!
