Vegetarian Recipe: Savory Lentil Stuffed Peppers

Today, I’m excited to share a delicious and hearty recipe for savory lentil stuffed peppers. This dish is perfect for a cozy dinner at home or a gathering with friends. The combination of fluffy lentils, aromatic herbs, and sweet bell peppers creates a dish that is both satisfying and flavorful.

Ingredients:

  • 3 red bell peppers
  • 200g green lentils
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tomato, diced
  • 500ml vegetable broth
  • Handful of fresh parsley, chopped
  • 1 tsp dried oregano
  • Salt and pepper, to taste

Kitchen Tools:

To start, preheat your oven to 180°C (350°F). Cut the tops off the red bell peppers and remove the seeds and membranes from inside. Place the peppers in a baking dish and set aside.

In a saucepan, heat some olive oil over medium heat. Add the diced onion and minced garlic, cooking until softened. Stir in the green lentils, diced tomato, vegetable broth, dried oregano, salt, and pepper. Bring the mixture to a boil, then reduce the heat and simmer for about 20-25 minutes, or until the lentils are tender.

Once the lentil mixture is ready, spoon it into the hollowed-out red bell peppers, filling them to the top. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.

When the stuffed peppers are done baking, remove them from the oven and sprinkle chopped fresh parsley on top for a pop of color and flavor. Serve the savory lentil stuffed peppers hot, garnished with extra parsley if desired.

The approximate total weight of the cooked dish is 800g, with 3 servings in total. Each serving weighs approximately 267g. Each serving is around 250 calories.

Tip:

For an extra kick of flavor, try adding a sprinkle of feta cheese on top of the stuffed peppers before baking. The creamy and tangy cheese pairs perfectly with the hearty lentils.
