Today’s Dish: Spicy Pineapple Coconut Curry

This dish combines the sweetness of pineapple with the creaminess of coconut milk and a kick of spice for a truly unforgettable culinary experience.

Ingredients:

  • 200g pineapple (diced)
  • 400ml coconut milk
  • 300g chicken breast (sliced)
  • 50g red curry paste
  • 30ml fish sauce
  • 20g brown sugar
  • 15ml lime juice
  • a handful of basil leaves

To begin, heat a large skillet over medium heat and add the red curry paste. Cook for a minute until fragrant, then add the sliced chicken breast and cook until browned on all sides. Next, pour in the coconut milk, fish sauce, and brown sugar, stirring to combine.

Once the sauce begins to simmer, add the diced pineapple and let it cook for about 5 minutes until slightly softened. Squeeze in the lime juice for a burst of freshness, then toss in the basil leaves for a pop of herbaceous flavor.

Allow the curry to simmer for an additional 10 minutes, allowing all the flavors to meld together beautifully. Serve hot over steamed rice for a satisfying and aromatic meal.
