Mushroom and Blueberry Risotto

Today, I’m excited to share a unique recipe that combines the earthy flavors of mushrooms with the sweet and tart notes of blueberries. This unexpected combination will surely surprise your taste buds and add a touch of creativity to your culinary adventures.

Ingredients:

  • 200g Arborio rice
  • 150g mixed mushrooms (such as shiitake, oyster, and cremini), sliced
  • 100g fresh blueberries
  • 1 shallot, finely chopped
  • 100ml white wine
  • 750ml vegetable broth
  • 50g grated Parmesan cheese
  • 2 tbsp butter
  • 2 tbsp olive oil
  • To taste

  • wooden spoon
  • grater

Start by heating the vegetable broth in a saucepan over medium heat. In another large saucepan, heat the olive oil and 1 tablespoon of butter. Add the chopped shallot and cook until translucent.

Add the sliced mushrooms to the pan and cook until they are golden brown and have released their juices. Season with salt and pepper to taste. Stir in the Arborio rice and cook for another minute until the rice is coated with the mushroom mixture.

Pour in the white wine and stir until it is absorbed by the rice. Gradually add the warm vegetable broth, one ladleful at a time, stirring constantly and allowing each addition to be absorbed before adding more. This process will take about 20-25 minutes.

When the rice is creamy and al dente, stir in the remaining butter, grated Parmesan cheese, and fresh blueberries. The blueberries will burst slightly, adding a beautiful color and flavor to the risotto.

Remove the risotto from the heat and let it rest for a minute before serving. Spoon the risotto into bowls and garnish with extra Parmesan cheese and fresh blueberries for a delightful presentation.

The approximate total weight of the cooked dish is 1100g, with 4 servings at around 275g each. Each serving is approximately 350 calories.

A clever tip for this recipe is to reserve a few blueberries and mushrooms to use as a garnish. This will enhance the visual appeal of the dish and provide a burst of fresh flavor with each bite.
