Fall Comfort Food: Creamy Pumpkin Risotto

As the leaves start to fall and the air turns crisp, I find myself craving warm, comforting dishes that remind me of cozy autumn nights. Today, I’m excited to share my unique recipe for Creamy Pumpkin Risotto, a dish that combines the rich flavors of pumpkin with the creamy texture of risotto. This dish is perfect for a fall evening when you want something comforting and satisfying.

To start, you’ll need the following ingredients:

  • Arborio rice (300g)
  • Pumpkin, diced (200g)
  • Chicken broth (1L)
  • Onion, finely chopped (1)
  • Garlic, minced (2 cloves)
  • Parmesan cheese, grated (50g)
  • Butter (50g)
  • White wine (120ml)
  • Fresh sage, chopped (2 tbsp)
  • Salt and pepper to taste

For this recipe, you’ll need the following kitchen tools:

  • Large saucepan
  • Wooden spoon
  • Chef’s knife
  • Cutting board
  • Grater

Start by heating the chicken broth in a large saucepan over medium heat. In another large saucepan, melt the butter and sauté the onions until translucent. Add the garlic and Arborio rice, and cook for a few minutes until the rice is lightly toasted.

Deglaze the pan with white wine and let it simmer until the liquid is almost evaporated. Slowly add the warm chicken broth, one ladle at a time, stirring frequently until the rice absorbs the liquid before adding more.

After about 15 minutes, add the diced pumpkin and continue cooking until the rice is creamy and tender. Stir in the grated Parmesan cheese, fresh sage, and season with salt and pepper to taste.

Once the risotto reaches a creamy consistency, remove it from heat and let it rest for a few minutes before serving. The creamy pumpkin risotto should have a smooth texture with a hint of sweetness from the pumpkin and the richness of Parmesan cheese.

The approximate total weight of the cooked dish is 800g, with 4 servings averaging 200g each. One serving of this creamy pumpkin risotto is approximately 350 calories.

One tip for this recipe is to use roasted pumpkin for added depth of flavor. Simply roast the diced pumpkin in the oven with a drizzle of olive oil and sprinkle of salt and pepper before adding it to the risotto.

I encourage you to try this Creamy Pumpkin Risotto recipe and make it your own by adding your favorite fall ingredients. Enjoy this warm and comforting dish on a cozy autumn evening with your loved ones. Bon appétit!
