Ingredients:

  • Arborio rice (300g)
  • Chicken broth (1 liter)
  • White wine (150ml)
  • Lemon zest and juice (1 lemon)
  • Fresh basil leaves (1 cup, chopped)
  • Heavy cream (100ml)
  • Shallots (2, finely chopped)
  • Garlic (2 cloves, minced)
  • Parmesan cheese (50g, grated)
  • Butter (2 tbsp)
  • Salt and pepper to taste

  • Large sauté pan
  • Wooden spoon
  • Grater
  • Lemon zester

To begin, heat the chicken broth in a saucepan over low heat, keeping it warm but not boiling. In a large sauté pan, melt the butter over medium heat and sauté the shallots and garlic until softened. Add the Arborio rice to the pan and stir to coat the grains in the butter.

Pour in the white wine and cook until it has been absorbed by the rice. Start adding the warm chicken broth, one ladleful at a time, stirring constantly and allowing each addition to be absorbed before adding more. This process should take about 20-25 minutes until the rice is creamy and cooked al dente.

Once the risotto is almost ready, stir in the lemon zest, lemon juice, chopped basil, heavy cream, and Parmesan cheese. Season with salt and pepper to taste. Cook for a few more minutes until the risotto reaches a creamy consistency and the flavors have melded together beautifully.

Garnish with extra basil leaves and a sprinkle of Parmesan before serving. This creamy lemon basil risotto is best enjoyed fresh and hot, so be sure to serve it immediately to savor all the delicate flavors.
