Exotic Aromatic Moroccan Lamb Stew: A Flavorful Journey to Marrake

Aromatic Moroccan Lamb Stew

As the weather starts to cool down, I find myself craving warm and comforting dishes that are bursting with flavor. Today, I’m excited to share with you my recipe for Aromatic Moroccan Lamb Stew. This dish is a perfect blend of savory and sweet flavors, with a hint of spice that will transport you straight to the bustling markets of Marrakech.

To start, gather these exotic ingredients:

  • 500g lamb shoulder, diced
  • 200g couscous
  • 100g dried apricots, chopped
  • 1 can (400g) chickpeas, drained and rinsed
  • 1 onion, finely chopped
  • 1 carrot, diced
  • 2 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tsp ground coriander
  • 500ml chicken stock
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Before we get started, make sure you have these essential kitchen tools:

  • chef’s knife
  • cutting board
  • large pot
  • wooden spoon

Start by heating the olive oil in a large pot over medium heat. Add the diced lamb shoulder and brown it on all sides, about 5-7 minutes. Remove the lamb from the pot and set it aside. In the same pot, add the chopped onion and carrot, sautéing until they start to soften, about 5 minutes.

Next, return the browned lamb to the pot and sprinkle in the ground cumin, cinnamon, and coriander. Stir everything together to coat the meat and vegetables in the aromatic spices. Pour in the chicken stock and bring the stew to a gentle simmer. Cover the pot and let it cook for 1.5 hours, allowing the flavors to meld together beautifully.

After the stew has simmered, add the chickpeas and dried apricots to the pot. Season with salt and pepper to taste, then cover the pot again and let it simmer for an additional 30 minutes.

While the stew is finishing up, prepare the couscous according to the package instructions. Fluff it up with a fork and serve alongside the fragrant Moroccan lamb stew.

The total weight of the cooked dish is approximately 1460g, with about 4 servings. Each serving weighs around 365g, and you can expect each serving to be around 450 calories.

One unique tip for this dish is to sprinkle some fresh cilantro leaves over the stew just before serving. The bright, herbal notes will complement the rich flavors in the dish and add a pop of freshness to each bite.
