Unique Purple Cauliflower and Crab Salad Recipe

Today, I am excited to share a unique and flavorful dish that is perfect for a cozy night in or a special occasion. This recipe brings together unexpected ingredients to create a dish that is both comforting and sophisticated.

Ingredients:

  • purple cauliflower
  • jumbo lump crab meat
  • blood orange
  • fennel bulb
  • pistachios
  • goat cheese
  • shallot
  • olive oil
  • dijon mustard
  • white wine vinegar
  • salt and pepper to taste

Kitchen Tools:

  • chef’s knife
  • cutting board
  • large saucepan
  • citrus juicer
  • mixing bowl

Preparation:

Start by preheating your oven to 400°F (200°C). Cut the purple cauliflower into florets and toss them with 2 tablespoons of olive oil, salt, and pepper. Roast the cauliflower in the oven for 20-25 minutes until it is tender and slightly charred.

While the cauliflower is roasting, prepare the dressing. In a small bowl, whisk together the remaining olive oil, dijon mustard, white wine vinegar, salt, and pepper. Set the dressing aside.

In a large saucepan, heat a drizzle of olive oil over medium heat. Add thinly sliced shallots and fennel. Cook for 5-7 minutes until the vegetables are soft and caramelized. Add the crab meat to the pan and stir gently to combine.

Assembly:

In a separate mixing bowl, combine the roasted purple cauliflower with the crab mixture. Add the dressing and toss everything together gently. Zest the blood orange over the salad, then peel and segment the orange. Add the orange segments to the salad.

Serving:

Divide the salad among plates and top each portion with crumbled goat cheese and chopped pistachios. The creamy goat cheese, sweet orange, and briny crab create a delightful combination of flavors and textures. Serve the salad warm or at room temperature.

Tips:

For an extra burst of flavor, try adding a sprinkle of sumac to the salad before serving. The citrusy tang of sumac pairs beautifully with the sweet blood orange and savory crab.

This dish serves 4 people and has a total weight of approximately 1200g. Each serving is around 300g. Estimate the calorie count per serving to be around 350 calories.
