Ingredients:

  • 1 ripe mango, diced
  • 1 jalapeno, minced
  • 1/2 red onion, finely chopped
  • 1 lime, juiced
  • Handful of fresh cilantro, chopped
  • 200g shrimp, deveined and peeled
  • 100ml coconut milk
  • Sriracha sauce, to taste
  • 4 corn tortillas

In a separate bowl, combine the diced mango, minced jalapeno, chopped red onion, lime juice, and fresh cilantro to create a vibrant mango salsa. Season with a pinch of salt for balance.

Warm the corn tortillas in a dry skillet until they are soft and pliable. Fill each tortilla with a spoonful of the creamy shrimp mixture and top with a generous scoop of the mango salsa.

Serve the Spicy Mango Tacos warm, garnished with extra cilantro leaves and a wedge of lime for squeezing. The combination of sweet mango, spicy shrimp, and tangy lime creates a burst of flavors that will delight your taste buds.
