This dish came to me in a dream, and I couldn’t wait to bring it to life in my kitchen. The result is a comforting and umami-packed bowl of deliciousness that will surely surprise your taste buds!

Ingredients:

  • spaghetti noodles (200g)
  • bacon (100g)
  • egg yolks (3)
  • white miso paste (2 tbsp)
  • dashi broth (500ml)
  • green onions (3, chopped)
  • black pepper (to taste)

Kitchen Tools:

  • large pot
  • frying pan
  • whisk
  • tongs
  • grater

To start, cook the spaghetti noodles according to package instructions in a large pot of salted water. In a separate frying pan, cook the bacon until crispy. Remove the bacon from the pan and chop it into small pieces.

In a bowl, whisk together the egg yolks and miso paste until well combined. Slowly pour in a ladle of the hot dashi broth while whisking continuously to temper the eggs.

Once the spaghetti is cooked, drain it and add it to the frying pan with the bacon. Pour the miso egg mixture over the noodles and toss everything together using tongs until the eggs are cooked and the noodles are coated in a creamy sauce.

Divide the miso carbonara among serving bowls and top with chopped green onions and a sprinkle of black pepper. Serve hot and enjoy the unique fusion of flavors!
