I’m excited to share a new dessert recipe with you all today! I was feeling inspired by the changing seasons and wanted to create something that encapsulates the flavors of summer in a unique and delicious way. So, I present to you my latest creation: Coconut Lime Tart with a Spicy Ginger Crust.

Ingredients:

  • Fresh ginger (50g)
  • Coconut cream (200ml)
  • Limes (2, zested and juiced)
  • Eggs (3)
  • Sugar (150g)
  • Butter (100g, melted)
  • All-purpose flour (200g)
  • Chili powder (1 tsp)
  • Salt (1/2 tsp)

Kitchen Tools:

  • tart pan
  • zester
  • juicer

To start, preheat your oven to 350°F (180°C). In a food processor, combine the fresh ginger, all-purpose flour, melted butter, chili powder, and salt. Pulse until the mixture resembles coarse crumbs. Press this mixture into a tart pan, covering the bottom and sides evenly. Bake the crust for 15 minutes until lightly golden brown.

In a mixing bowl, whisk together the eggs and sugar until light and frothy. Add in the coconut cream, lime zest, and lime juice, stirring until well combined. Pour this filling into the pre-baked crust and return to the oven for another 25-30 minutes, or until the filling is set.

Once the tart is done baking, allow it to cool completely before slicing and serving. This Coconut Lime Tart with a Spicy Ginger Crust is best enjoyed chilled, so feel free to refrigerate it for a few hours before serving.
