Ingredients:

  • 2 parsnips, peeled and chopped
  • 1 large sweet potato, cubed
  • 1 red onion, thinly sliced
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups baby spinach
  • 1 orange, zested and juiced
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1/4 cup walnuts, chopped

I start by preheating the oven to 400°F (200°C) and lining a baking sheet with parchment paper. I drizzle the olive oil over the vegetables and sprinkle them with salt and black pepper. I toss everything together until the vegetables are evenly coated with the seasonings.

Next, I spread the vegetables out in a single layer on the prepared baking sheet and roast them in the preheated oven for about 30-35 minutes, or until they are golden brown and tender. While the vegetables are roasting, I prepare the citrus dressing.

In a small bowl, I whisk together the orange zest, orange juice, balsamic vinegar, and honey until the dressing is well combined. Once the vegetables are done roasting, I remove them from the oven and let them cool slightly.
