As the weather starts to cool down and the leaves change colors, I find myself craving warm and comforting meals. Today, I want to share a unique twist on a classic comfort food dish that will surely satisfy your cravings. This Creamy Pumpkin Pasta is rich, flavorful, and perfect for a cozy night in.

Ingredients:

  • penne pasta (250g)
  • pumpkin puree (200g)
  • heavy cream (150ml)
  • bacon strips (6 pieces, chopped)
  • shallot (1, finely chopped)
  • garlic cloves (2, minced)
  • nutmeg (1/2 tsp, freshly grated)
  • fresh sage leaves (10, chopped)
  • Parmesan cheese (50g, grated)
  • salt and pepper to taste

Kitchen Tools:

  • skillet
  • wooden spoon
  • grater
  • knife

Start by cooking the penne pasta according to the package instructions in a large pot of salted water. In a skillet, cook the chopped bacon until crispy, then remove it from the pan and set it aside on a paper towel-lined plate.

In the same skillet, sauté the shallot and garlic until fragrant. Add the pumpkin puree, heavy cream, nutmeg, and chopped sage to the pan. Stir everything together until well combined and let it simmer for a few minutes to let the flavors meld. Season with salt and pepper to taste.

Once the pasta is cooked al dente, drain it and add it to the skillet with the pumpkin sauce. Toss everything together until the pasta is well coated in the creamy sauce. Add the crispy bacon and grated Parmesan cheese, reserving some for garnish.

Serve the Creamy Pumpkin Pasta hot, topped with extra Parmesan cheese and freshly ground black pepper.
