Today, I’m excited to share my recipe for Quinoa-Stuffed Bell Peppers, a delicious and nutritious option for a hearty dinner or meal prep.

For this recipe, you will need the following ingredients:

  • 3 medium red bell peppers
  • 1 cup quinoa
  • 1 cup cherry tomatoes, halved
  • 1 can (400g) black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 ripe avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

To prepare this dish, you will need the following kitchen tools:

Start by preheating your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish and set aside. In a saucepan, cook the quinoa according to package instructions.

In a large mixing bowl, combine the cooked quinoa, cherry tomatoes, black beans, corn, avocado, cilantro, lime juice, cumin, paprika, salt, and pepper. Mix everything together until well combined.
