Today, I’m excited to share a delightful dessert recipe that combines the sweet tropical flavor of mango with the creamy richness of coconut. These tangy mango coconut tarts are perfect for a sunny summer day or whenever you’re craving a taste of paradise.

Ingredients:

  • 200g mango puree
  • 150ml coconut milk
  • 100g sugar
  • 30g cornstarch
  • 3 egg yolks
  • 50g butter
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 150g flour

Kitchen Tools:

  • tart pans

To start, preheat your oven to 180°C. In a saucepan, combine the mango puree, coconut milk, sugar, and cornstarch over medium heat. Stir until the mixture thickens. In a separate bowl, whisk the egg yolks, then slowly add the hot mango mixture while whisking continuously. Return the mixture to the saucepan and cook until thickened. Remove from heat and stir in the butter, vanilla extract, baking powder, and salt.

In a mixing bowl, combine the flour with the mango mixture to form a dough. Press the dough into tart pans and bake for 20-25 minutes until golden brown. Let the tarts cool before serving.

These tangy mango coconut tarts weigh approximately 1200g when cooked. This recipe makes 8 servings, with each serving weighing around 150g. An average serving of these tarts contains approximately 280 calories.
