Ingredients:

  • 200g fresh pineapple chunks
  • 150ml coconut cream
  • 50g toasted shredded coconut
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 1/2 tsp ginger powder
  • 1/4 tsp cinnamon
  • 1 tsp lime zest
  • for garnish

Kitchen Tools:

  • ramekins

To start, combine the coconut cream, honey, vanilla extract, ginger powder, cinnamon, and lime zest in a mixing bowl. Whisk them together until well combined. In a saucepan, heat the mixture over low heat until it is warm but not boiling. Remove from heat and let it cool slightly.

Next, assemble your parfait by layering fresh pineapple chunks and toasted shredded coconut in ramekins. Pour the warm coconut cream mixture over the layers. Repeat the layers until the ramekins are filled to the top.

Chill the parfaits in the refrigerator for at least 2 hours to set and allow the flavors to meld together. Before serving, garnish with fresh mint leaves for a burst of freshness.

The total weight of the cooked dish is approximately 500g, with 4 servings. Each serving weighs around 125g. One serving of this pineapple coconut parfait is approximately 200 calories.
