Ingredients:

  • jasmine rice (300g, cooked and cooled)
  • fresh pineapple chunks (200g)
  • shrimp (150g, peeled and deveined)
  • red bell pepper (1, diced)
  • onion (1, chopped)
  • garlic (3 cloves, minced)
  • red chili pepper (1, thinly sliced)
  • fish sauce (2 tbsp)
  • soy sauce (1 tbsp)
  • sesame oil (1 tbsp)
  • lime juice (1 tbsp)
  • fresh cilantro (for garnish)

To start, heat some sesame oil in a wok over medium-high heat. Add in the minced garlic and sliced chili pepper, and sauté until fragrant. Toss in the chopped onion and red bell pepper, and cook until they start to soften.

Next, add in the shrimp and cook until they turn pink and opaque. Push everything to one side of the wok and crack in an egg. Scramble the egg until fully cooked, then mix it with the rest of the ingredients in the wok.

Add the cooked jasmine rice to the wok, breaking up any clumps with a wooden spoon. Pour in the fish sauce, soy sauce, and lime juice, and stir everything together until well combined. Toss in the fresh pineapple chunks and cook for another 2-3 minutes.
