Today, I am excited to share a unique recipe that I recently discovered during a trip to a local farmers’ market. The vibrant colors and fragrant aromas of the fresh produce inspired me to create a dish that celebrates the beauty of seasonal ingredients in a completely unexpected way.

Ingredients

  • purple cauliflower (200g)
  • golden raspberries (150g)
  • black garlic cloves (50g)
  • coconut milk (250ml)
  • lemongrass stalks (2 stalks)
  • vanilla bean (1 bean)
  • quinoa (100g)
  • pistachios (50g)

Preparation

I start by cutting the purple cauliflower into florets and roasting them in the oven until tender and slightly caramelized. In a saucepan, I combine the coconut milk, crushed black garlic cloves, sliced lemongrass, and scraped vanilla bean seeds to infuse the flavors together.

Meanwhile, I rinse the quinoa and cook it in a separate pot until fluffy and light. I also roughly chop the golden raspberries and pistachios for a pop of color and crunch in the dish. Once the cauliflower is roasted and the coconut milk mixture is fragrant, I blend them together until smooth and creamy.

Assembly

To serve, I spoon the quinoa into a bowl, top it with the cauliflower coconut puree, and sprinkle the chopped golden raspberries and pistachios on top. The combination of flavors and textures is truly a feast for the senses, with the earthy cauliflower, sweet raspberries, and nutty pistachios creating a harmonious balance.

Tips

For an extra layer of flavor, try sprinkling a pinch of smoked paprika on top of the dish before serving. The smokiness adds a subtle complexity that elevates the overall taste experience.
