Today’s Unique Breakfast Creation: Mediterranean Shakshuka Cups

As I woke up today feeling inspired by the flavors of the Mediterranean, I decided to create a new breakfast recipe that combines the rich and savory taste of shakshuka with a fun and portable twist. These Mediterranean Shakshuka Cups are a unique take on the classic dish, perfect for a cozy morning at home or a busy day on the go.

To make these flavorful breakfast cups, you will need the following ingredients:

  • 200g cherry tomatoes
  • 4 eggs
  • 50g feta cheese
  • 1/2 red onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper
  • Salt and pepper
  • 1/4 cup fresh parsley, chopped

For this recipe, you will need the following kitchen tools:

  • muffin tin
  • mixing bowl
  • skillet
  • chef’s knife
  • cutting board

Start by preheating your oven to 375°F (190°C) and greasing a muffin tin. In a skillet over medium heat, heat the olive oil and sauté the diced red onion until translucent. Add in the minced garlic, smoked paprika, cumin, and cayenne pepper, cooking for another minute until fragrant.

Next, add the cherry tomatoes to the skillet and cook for about 5-7 minutes, until they begin to soften and burst. Season with salt and pepper to taste. Using the back of a spoon, slightly crush some of the tomatoes to release their juices.

Carefully spoon the tomato mixture into each muffin cup, creating a small well in the center. Crack an egg into each well and crumble feta cheese on top. Bake in the preheated oven for 15-20 minutes, or until the egg whites are set but the yolks are still runny.

Once cooked, remove the muffin tin from the oven and let it cool slightly. Garnish the Mediterranean Shakshuka Cups with chopped fresh parsley before serving. These flavorful breakfast cups are best enjoyed warm, either on their own or with toasted bread for dipping.

The total weight of the cooked dish is approximately 600g, with 4 servings at 150g each. Each serving is around 250 calories.

A clever tip for this recipe is to add a sprinkle of za’atar or sumac on top of the cups before serving for an extra burst of flavor. Feel free to customize these Mediterranean Shakshuka Cups with your favorite herbs or spices to make them your own.
