This tangy tomato soup with grilled cheese croutons is a unique twist on a classic favorite, combining the rich flavors of tomato soup with the crispy goodness of a grilled cheese sandwich. Ingredients:

  • 6 Roma tomatoes (600g)
  • 1 large carrot, peeled and diced (100g)
  • 1 yellow onion, diced (150g)
  • 3 cloves of garlic, minced
  • 4 cups vegetable broth (1 liter)
  • 1 tablespoon white sugar
  • 1/2 cup heavy cream (120ml)
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 4 slices of bread
  • 4 slices of cheddar cheese

Start by preheating your oven to 400°F (200°C). Cut the Roma tomatoes in half and place them on a baking sheet, cut side up. Drizzle with olive oil and roast in the oven for 30 minutes until they are soft and slightly charred.

In a large pot, melt butter over medium heat. Add the diced carrots, onions, and minced garlic. Cook until the vegetables are soft and fragrant, about 5-7 minutes.

Add the roasted tomatoes (including any juices from the baking sheet) to the pot. Pour in the vegetable broth and sugar. Bring the soup to a simmer and let it cook for 15-20 minutes until the vegetables are tender.

Using a blender, carefully blend the soup until smooth. Return it to the pot and stir in the heavy cream. Season with salt and pepper to taste. Keep warm over low heat while you make the grilled cheese croutons.

Take the bread slices and top each one with a slice of cheddar cheese. Place another slice of bread on top to make a sandwich. In a skillet over medium heat, grill the sandwiches until crispy and golden brown on both sides. Cut the sandwiches into bite-sized croutons.

To serve, ladle the tomato soup into bowls and top with the grilled cheese croutons. Enjoy the delicious combination of tangy tomato soup with crunchy grilled cheese in every spoonful!
