Today’s Creation: Sweet and Spicy Mango Chicken Stir-Fry

Hey there, foodies! Today, I’m excited to share a recipe that has been inspired by the vibrant flavors of summer. As the weather heats up, I find myself craving light and refreshing meals, but with a touch of heat to keep things interesting. That’s why I’ve created this Sweet and Spicy Mango Chicken Stir-Fry that combines the sweetness of ripe mangoes with the kick of spicy chili peppers. It’s a perfect balance of flavors that will leave you wanting more!

To start off this delicious dish, gather the following ingredients:

  • 300g chicken breast, thinly sliced
  • 1 ripe mango, diced
  • 1 red bell pepper, sliced
  • 1 onion, thinly sliced
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, minced
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp sriracha
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 1 tbsp sesame seeds, for garnish

Next, make sure you have the following kitchen tools on hand:

  • knife
  • cutting board
  • wok
  • spatula
  • measuring spoons

Start by heating vegetable oil in a wok over medium-high heat. Add the sliced chicken breast and stir-fry until cooked through. Remove the chicken from the wok and set aside. In the same wok, add the sliced onion, garlic, and ginger. Cook until fragrant, then add the red bell pepper and diced mango.

In a small bowl, whisk together soy sauce, honey, sriracha, and cornstarch. Pour the sauce over the vegetables in the wok and stir well to combine. Add the cooked chicken back to the wok and toss everything together until the sauce has thickened and coated the ingredients evenly.

To finish off the dish, sprinkle sesame seeds over the stir-fry for a nutty crunch. Serve the Sweet and Spicy Mango Chicken Stir-Fry hot over steamed rice or noodles for a complete meal that is bursting with flavor.

This recipe makes approximately 4 servings, with each serving weighing around 300g. One serving of this delectable stir-fry clocks in at around 350 calories, making it a guilt-free indulgence.

One clever tip to make this dish even more flavorful is to marinate the chicken in a mixture of soy sauce, honey, and ginger for at least 30 minutes before cooking. This will infuse the meat with extra flavor and tenderness.

I hope you give this Sweet and Spicy Mango Chicken Stir-Fry a try and enjoy the explosion of flavors in every bite. Feel free to customize the heat level by adjusting the amount of sriracha to suit your taste buds. Happy cooking!
