Indulge in the Cozy Season with this Fall Comfort Food Recipe!

Today, I’m excited to share a unique and warming dish that combines the flavors of fall in a whole new way. With the crisp air starting to settle in and the leaves turning beautiful shades of red and orange, I wanted to create a recipe that would be the perfect complement to this cozy season.

Ingredients:

  • purple sweet potatoes (600g)
  • chestnuts (150g)
  • sage leaves (10g)
  • pumpkin seeds (50g)
  • maple syrup (50ml)
  • nutmeg (5g)
  • coconut milk (200ml)
  • salt (to taste)
  • olive oil (30ml)

Kitchen Tools:

  • chef’s knife
  • cutting board
  • oven
  • baking tray
  • blender
  • saucepan

To start, preheat your oven to 200°C. Peel and chop the purple sweet potatoes into cubes and place them on a baking tray. Drizzle with olive oil, sprinkle with salt, and roast in the oven for 30 minutes until tender and slightly caramelized.

In the meantime, peel the chestnuts, crush them, and toast them in a dry pan until fragrant. Set them aside. In a saucepan, heat the coconut milk with the sage leaves until warm, then remove the leaves and set the milk aside.

Once the sweet potatoes are cooked, transfer them to a blender. Add the roasted chestnuts, pumpkin seeds, maple syrup, nutmeg, and warm coconut milk. Blend until smooth and creamy, adjusting the seasoning to taste.

Serve the vibrant purple sweet potato puree in bowls, drizzled with a bit of olive oil and topped with extra toasted chestnuts, pumpkin seeds, and a sprinkle of nutmeg for a fall-inspired finish.
