Ingredients

  • purple cauliflower (300g)
  • white chocolate (100g)
  • pistachios (50g)
  • dried apricots (50g)
  • harissa spice blend
  • honey
  • olive oil

  • baking sheet
  • chef’s knife

Preparation

Start by preheating your oven to 375°F (190°C). Cut the purple cauliflower into florets and toss them in olive oil and a sprinkle of harissa spice blend. Roast the cauliflower on a baking sheet for about 25-30 minutes until tender and slightly charred.

While the cauliflower is roasting, melt white chocolate in a saucepan over low heat, stirring constantly to avoid burning. Once melted, remove from heat and let it cool slightly.

In a food processor, pulse pistachios and dried apricots until finely chopped. Add the roasted cauliflower, melted white chocolate, and a drizzle of honey to the food processor. Pulse until the mixture is well combined but still has some texture.

Transfer the mixture to a bowl and refrigerate for at least 30 minutes to allow it to firm up. Once chilled, use a spoon or cookie scoop to form the mixture into small, bite-sized balls.

Serving

Serve the purple cauliflower truffles on a platter and garnish with a sprinkle of chopped pistachios for an extra crunch. These truffles are best enjoyed chilled and can be stored in the refrigerator for up to 5 days.

For an extra burst of flavor, try adding a pinch of sea salt to the mixture before chilling. This will elevate the sweetness of the white chocolate and the earthiness of the cauliflower.
