Today, I’m excited to share with you my unique twist on a classic comfort dish: Spicy Pumpkin Risotto. As we enter the fall season, I wanted to create a recipe that captures the warmth and coziness of autumn while adding a surprising kick of spice. This dish is perfect for a chilly evening when you crave something hearty and flavorful.

Ingredients:

  • arborio rice (300g)
  • pumpkin puree (200g)
  • chicken broth (900ml)
  • onion (1, diced)
  • garlic (3 cloves, minced)
  • red chili flakes (1 tsp)
  • ground cumin (1 tsp)
  • coriander powder (1 tsp)
  • cayenne pepper (1/2 tsp)
  • coconut milk (200ml)
  • fresh cilantro (for garnish)

Kitchen Tools:

  • saucepan
  • wooden spoon
  • chef’s knife
  • cutting board

To start, heat a saucepan over medium heat and add a splash of olive oil. Sauté the diced onion and minced garlic until fragrant. Add the arborio rice and toast it for a few minutes until it’s lightly golden.

Next, pour in a ladleful of chicken broth and stir the rice continuously until the broth is absorbed. Continue adding the broth gradually, stirring frequently, until the rice is creamy and cooked to al dente.

Once the rice is almost cooked, stir in the pumpkin puree, red chili flakes, ground cumin, coriander powder, and cayenne pepper. Cook for another 5 minutes, allowing the flavors to meld together. Finally, pour in the coconut milk and simmer for a few more minutes until the risotto reaches a creamy consistency.

Remove the saucepan from the heat and let the risotto rest for a few minutes. Serve the Spicy Pumpkin Risotto hot, garnished with fresh cilantro for a burst of freshness.
