Ingredients:

  • 1 small watermelon (sliced)
  • 200g feta cheese
  • 100g arugula
  • 50g pine nuts
  • Handful of fresh mint leaves
  • 2 tbsp olive oil
  • 2 tbsp balsamic glaze
  • Salt and pepper to taste

Start by heating a grill pan over medium-high heat. Place the watermelon slices on the hot grill and cook for 2-3 minutes on each side until grill marks appear.

In a mixing bowl, combine the arugula, crumbled feta cheese, pine nuts, and torn mint leaves. Drizzle the olive oil over the salad and season with salt and pepper. Toss everything together gently to combine.
