This dish is perfect for a cozy fall evening or a holiday gathering when you want to impress your guests with a unique twist on a classic side dish.

Ingredients:

  • 2 large sweet potatoes, peeled and diced
  • 10 dates, pitted and chopped
  • 1 cup coconut milk
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 tbsp maple syrup
  • 1/4 cup coconut flakes
  • 1/4 cup pecans, chopped

To start, preheat your oven to 375°F (190°C). In a mixing bowl, combine the diced sweet potatoes, chopped dates, coconut milk, cinnamon, nutmeg, and maple syrup. Mix everything together until the sweet potatoes are well coated with the creamy, spiced mixture.

Transfer the sweet potato and date mixture to a baking dish, spreading it out evenly. Sprinkle the coconut flakes and chopped pecans on top for added crunch and flavor.

Cover the baking dish with foil and bake in the preheated oven for about 45 minutes, or until the sweet potatoes are tender. Remove the foil for the last 10 minutes of baking to allow the top to brown slightly.
