Today’s Veggie Delight: Curried Chickpea Stuffed Sweet Potatoes

Hey there, fellow foodies! Today I’m excited to share a delicious and satisfying recipe that combines the earthy sweetness of sweet potatoes with the bold flavors of curry-spiced chickpeas. This is the perfect dish for a cozy night in or a casual dinner with friends. Let’s dive into the details!

Ingredients:

  • 4 medium sweet potatoes
  • 1 can (400g) chickpeas, drained and rinsed
  • 1/2 cup coconut milk
  • 2 tablespoons curry powder
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Kitchen Tools:

  • baking sheet
  • mixing bowl
  • potato masher
  • skillet

To start, preheat your oven to 400°F (200°C). Scrub the sweet potatoes and pierce each one several times with a fork. Place them on a baking sheet and bake for about 45-60 minutes, or until they are tender when pierced with a knife.

While the sweet potatoes are baking, heat olive oil in a skillet over medium heat. Add the diced onion and minced garlic, cooking until fragrant. Add the curry powder and stir for about a minute until the spices are toasted.

Next, add the chickpeas to the skillet, along with the coconut milk. Stir well and let the mixture simmer for about 10 minutes, allowing the flavors to meld together. Use the potato masher to lightly mash some of the chickpeas to create a creamy texture.

Stir in the fresh spinach and allow it to wilt in the curry mixture. Season with salt and pepper to taste.

Once the sweet potatoes are done baking, slice each one open lengthwise and fluff the insides with a fork. Spoon the curried chickpea mixture generously into each sweet potato, allowing the flavors to meld together.

Serve hot and enjoy the explosion of flavors in every bite!
