For this recipe, you will need the following ingredients:
– 300g butternut squash, diced
– 200g quinoa
– 1 red onion, finely chopped
– 2 cloves of garlic, minced
– 1 tsp ground cumin
– 1 tsp smoked paprika
– 500ml vegetable broth
– 100g feta cheese, crumbled
– Handful of fresh parsley, chopped
– Salt and pepper to taste

In addition, you will need the following kitchen tools:

  • cutting board
  • large skillet
  • wooden spoon

To start, heat a large skillet over medium heat and add a drizzle of olive oil. Add the chopped red onion and minced garlic, and sauté until softened. Next, add the diced butternut squash and cook until slightly caramelized. Sprinkle in the ground cumin and smoked paprika, stirring to coat the vegetables.

Add the quinoa to the skillet and toast it for a couple of minutes before pouring in the vegetable broth. Bring the mixture to a boil, then reduce the heat to a simmer and cover the skillet. Let it cook for about 15-20 minutes, or until the quinoa is tender and has absorbed the liquid.
