Ingredients

  • boneless chicken thighs (400g)
  • mango (1, diced)
  • coconut milk (200ml)
  • curry powder (2 tbsp)
  • cinnamon (1 tsp)
  • ginger (1 inch, grated)
  • garlic cloves (2, minced)
  • onion (1, diced)
  • vegetable oil (2 tbsp)
  • salt and pepper to taste

Preparation

In a saute pan, heat vegetable oil over medium heat. Add diced onions and minced garlic, cooking until fragrant. Season boneless chicken thighs with curry powder, salt, and pepper, then add them to the pan, cooking until browned on all sides.

Next, add diced mango, grated ginger, and cinnamon to the pan, stirring to combine. Pour in coconut milk and let the mixture simmer for 15-20 minutes, allowing the flavors to meld together. Adjust seasoning to taste with salt and pepper.
