Aromatic Lemongrass Chicken with Coconut Rice

Today, I’m excited to share a dish that always transports me to the bustling streets of Southeast Asia. Aromatic Lemongrass Chicken with Coconut Rice is a vibrant and flavorful meal that is perfect for a cozy night in or a lively dinner party with friends. The combination of fragrant lemongrass, spicy chilies, creamy coconut milk, and tender chicken is truly irresistible.

Ingredients:

  • 500g
  • 2 stalks
  • 400ml
  • 1
  • 1
  • 3 cloves
  • 1-inch piece
  • 250g
  • for garnish

Kitchen Tools:

  • chef’s knife
  • cutting board
  • mortar and pestle
  • skillet

To start, finely chop the lemongrass, red chili, shallot, garlic, and ginger. Lightly bruise the lemongrass in a mortar and pestle to release its fragrant oils. Heat a skillet over medium heat, add a splash of oil, and sauté the aromatics until softened.

Next, add the chicken thighs to the skillet and brown on all sides. Pour in the coconut milk and bring the mixture to a simmer. Cover and let the chicken cook until tender and infused with all the flavors, about 20-25 minutes.

While the chicken is simmering, rinse the rice thoroughly until the water runs clear. Cook the rice according to package instructions, substituting water with coconut milk for added richness.

Once the chicken is cooked through and the rice is fluffy, it’s time to serve. Spoon the aromatic lemongrass chicken over a mound of coconut rice, garnish with fresh cilantro, and enjoy the explosion of flavors in every bite.
