This dish is perfect for brunch, lunch, or even a light dinner, and it never fails to impress with its unexpected combination of ingredients.

To start, gather the following ingredients:

  • store-bought puff pastry
  • blueberries (150g)
  • pancetta (100g)
  • goat cheese (100g)
  • honey
  • fresh thyme
  • black pepper

Next, preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper. Roll out the puff pastry into a rectangular shape and transfer it to the prepared baking sheet. Using a sharp knife, score a border around the edges of the pastry, about 1 inch from the edge, to create a crust.

In a small saucepan, cook the pancetta over medium heat until crispy. Remove from the pan and set aside. In a small bowl, mix the goat cheese with a drizzle of honey and a pinch of black pepper. Spread this mixture evenly over the puff pastry within the border.

Top the goat cheese mixture with the cooked pancetta and fresh blueberries. Sprinkle some fresh thyme leaves over the top for added flavor. Bake in the preheated oven for 15-20 minutes, or until the pastry is golden and puffed.
