Exploring New Tastes: Tofu Stir-Fry with Pineapple and Cashews

Today, I’m excited to share a unique and flavorful recipe that combines the creaminess of tofu with the sweetness of pineapple and the crunch of cashews. This dish is perfect for a light lunch or dinner, and it always transports me to a tropical paradise with its vibrant flavors!

Ingredients:

  • extra-firm tofu (300g)
  • pineapple chunks (200g)
  • cashews (50g)
  • red bell pepper, sliced (1)
  • green onions, chopped (2)
  • soy sauce (30ml)
  • sesame oil (15ml)
  • garlic, minced (2 cloves)
  • ginger, grated (1 tablespoon)
  • cornstarch (1 tablespoon)
  • vegetable broth (120ml)
  • cooked rice, for serving

Kitchen Tools:

  • wok
  • knife
  • cutting board
  • spatula
  • measuring cups

To start, press the tofu to remove excess water and cut it into cubes. In a wok, heat some sesame oil and add the tofu cubes to brown them on all sides. Once crispy, remove the tofu and set it aside.

In the same wok, add garlic, ginger, and red bell pepper. Stir-fry until fragrant, then add the pineapple chunks, cashews, and green onions. In a small bowl, mix soy sauce, cornstarch, and vegetable broth, then pour over the stir-fry. Allow the sauce to thicken before adding back the tofu.

Serve the tofu stir-fry over cooked rice and enjoy the delightful mix of textures and flavors.

The approximate total weight of the cooked dish is 800g, with four servings at 200g each. Each serving is approximately 350 calories.

One clever tip for this dish is to marinate the tofu in soy sauce and sesame oil for extra flavor before cooking. This simple step adds a depth of taste that elevates the entire dish.
