Today, I wanted to share a special dessert creation that combines some of my favorite flavors in a unique and delicious way. These Caramelized Pineapple Cheesecake Crepes are perfect for a summer treat or a fancy brunch dish. The sweet and tangy pineapple paired with the creamy cheesecake filling is a match made in dessert heaven!

For this recipe, you will need the following ingredients:

  • pineapple (fresh) – 300g, diced
  • sugar – 50g
  • butter – 30g
  • cream cheese – 200g
  • powdered sugar – 50g
  • vanilla extract – 1 tsp
  • whipping cream – 150ml
  • crepes – 8, store-bought or homemade

To create this delectable dessert, you will need the following kitchen tools:

  • saucepan
  • frying pan
  • mixing bowl
  • whisk
  • spatula

Start by caramelizing the diced pineapple in a saucepan with sugar and butter until golden and fragrant. Set aside to cool. In a mixing bowl, combine cream cheese, powdered sugar, and vanilla extract until smooth. In a separate bowl, whip the cream until stiff peaks form, then fold it into the cream cheese mixture.

To assemble the crepes, spread a generous amount of the cheesecake filling onto each crepe, then top with a spoonful of the caramelized pineapple. Roll up the crepes and place them seam-side down in a baking dish. Bake in the oven at 180°C for 10-12 minutes until the crepes are slightly golden and the filling is set.

Once out of the oven, let the crepes cool slightly before serving. The combination of warm, caramelized pineapple and creamy cheesecake filling is simply irresistible. Each bite is a delightful blend of flavors and textures that will have you coming back for more.

This recipe makes approximately 8 crepes, with a total weight of around 1200g. Each serving is roughly 150g, with an estimated calorie count of 250 per crepe.
