Ingredients:

  • 4 large bell peppers (mix of colors)
  • 1 cup cooked quinoa
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 small red onion, diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar cheese
  • Fresh cilantro for garnish

To begin, preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place the bell peppers in a baking dish and set aside.

In a medium mixing bowl, combine the cooked quinoa, black beans, corn, red onion, cumin, chili powder, salt, and pepper. Mix well to combine all the ingredients. Spoon the mixture into each bell pepper until they are filled to the top.

Sprinkle the shredded cheddar cheese on top of each stuffed bell pepper. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender. Remove the foil and bake for an additional 5-10 minutes until the cheese is melted and bubbly.

Once the stuffed bell peppers are done baking, remove them from the oven and garnish with fresh cilantro. Serve hot and enjoy!
