Autumn Recipe: Spiced Pumpkin Risotto

Today, I’m excited to share with you a cozy and comforting dish perfect for the autumn season – my Spiced Pumpkin Risotto. This recipe brings together the warm flavors of pumpkin, cinnamon, and nutmeg in a creamy and indulgent rice dish that is sure to become a fall favorite.

Ingredients:

  • 200g Arborio rice
  • 250g pumpkin puree
  • 750ml chicken broth
  • 1 large onion, finely chopped
  • 2 cloves of garlic, minced
  • 50g butter
  • 50g grated Parmesan cheese
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • To taste

Kitchen Tools:

  • saucepan
  • wooden spoon
  • chef’s knife
  • grater

To begin, heat the chicken broth in a saucepan over low heat, keeping it warm but not boiling. In a separate large saucepan, melt the butter over medium heat. Add the chopped onion and garlic, cooking until softened and fragrant.

Next, add the Arborio rice to the saucepan, stirring to coat the grains in the butter mixture. Cook for a few minutes until the rice becomes slightly translucent. Pour in a ladleful of the warm chicken broth, stirring continuously until absorbed. Continue adding the broth one ladleful at a time, allowing each addition to be absorbed before adding more.

After about 15-20 minutes of stirring and adding broth, the risotto should be creamy and the rice cooked through but still slightly al dente. Stir in the pumpkin puree, cinnamon, nutmeg, and grated Parmesan cheese. Season with salt and pepper to taste.

Remove the risotto from heat and let it rest for a few minutes before serving. The risotto should be creamy and luxurious, with the warm spices of cinnamon and nutmeg complementing the rich pumpkin flavor.

This Spiced Pumpkin Risotto weighs approximately 1200g once cooked and serves 4 people. Each serving is approximately 300g, with an estimated calorie count of 350 per serving.

Tip:

For an extra indulgent twist, try stirring in a tablespoon of cream cheese at the end of cooking for added richness and creaminess.
