Introduction

Today, I want to share a dish that reminds me of lazy summer afternoons spent in my grandmother’s garden. This recipe for roasted peach and prosciutto salad combines sweet, juicy peaches with salty prosciutto and tangy goat cheese for a burst of flavor in every bite.

Ingredients

  • 4 ripe peaches (approx. 500g)
  • 100g prosciutto
  • 100g goat cheese
  • 200g mixed greens
  • 50ml balsamic vinegar
  • 50ml olive oil
  • 1 tbsp honey
  • to taste

Preparation

Start by preheating your oven to 200°C. Place the peach slices on a baking sheet and drizzle with olive oil, honey, salt, and pepper. Roast in the oven for 15-20 minutes until the peaches are caramelized and juicy.

In a mixing bowl, whisk together balsamic vinegar and olive oil to create the dressing. Season with salt and pepper to taste. Toss the mixed greens in the dressing until coated evenly.

Arrange the roasted peaches, prosciutto, and crumbled goat cheese on top of the dressed mixed greens. Drizzle any remaining dressing over the salad for extra flavor.

Tips for Success

For an extra touch of sweetness, try sprinkling some toasted almonds or walnuts over the salad before serving. The nuts add a crunchy texture that complements the soft peaches and creamy goat cheese perfectly.
