Ingredients:

  • 1 can (565g) canned pineapple tidbits, drained
  • 1 cup (125g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp salt
  • 1/2 cup (120ml) milk
  • 1/4 cup (56g) butter, melted
  • 1 tsp vanilla extract
  • 1 cup (200g) brown sugar
  • 1 cup (240ml) hot water

To start, preheat your oven to 350°F (180°C). In a mixing bowl, combine the flour, granulated sugar, baking powder, cinnamon, ginger, and salt. Add in the milk, melted butter, and vanilla extract, stirring until just combined. Fold in the drained pineapple tidbits, then spread the mixture evenly into an 8×8 baking dish.

In a separate bowl, mix the brown sugar with hot water until the sugar is dissolved. Carefully pour this mixture over the batter in the baking dish – do not stir. Place the dish in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and the cake is set.
