For this recipe, you’ll need:
– 300g boneless, skinless chicken breast, thinly sliced
– 1 ripe mango, peeled and diced
– 1 red bell pepper, sliced
– 1 small red onion, thinly sliced
– 2 cloves of garlic, minced
– 1 red chili, thinly sliced
– 2 tablespoons soy sauce
– 1 tablespoon honey
– 1 tablespoon rice vinegar
– 1 teaspoon sesame oil
– Salt and pepper to taste
– Fresh cilantro for garnish

Preparation:

Start by heating your wok over medium-high heat. Add a splash of sesame oil and toss in the sliced chicken. Cook until the chicken is browned and cooked through, then remove it from the wok and set it aside.

In the same wok, add a bit more sesame oil if needed and sauté the garlic, red onion, and red chili until fragrant. Add the sliced red bell pepper and continue to cook until the vegetables are tender-crisp.

Next, add the diced mango to the wok along with the soy sauce, honey, and rice vinegar. Stir well to combine all the flavors. Return the cooked chicken to the wok and toss everything together until heated through.
