  • 1 small pineapple, peeled and cubed
  • 400ml coconut milk
  • 1 large onion, chopped
  • 2 red chilies, sliced
  • 2 tbsp curry powder
  • 1-inch piece of ginger, grated
  • 3 cloves of garlic, minced
  • Handful of fresh coriander leaves
  • 1 lime, juiced
  • Salt to taste

To bring this dish to life, you’ll need the following kitchen tools:

  • chef’s knife
  • cutting board
  • large pan
  • wooden spoon

Start by heating some oil in a large pan over medium heat. Add the chopped onions, red chilies, garlic, and grated ginger. Sauté until the onions are translucent and fragrant.

Next, add the diced chicken breast to the pan and cook until browned on all sides. Sprinkle the curry powder over the chicken and mix well to coat the meat evenly.

Pour in the coconut milk and bring the mixture to a simmer. Let it cook for about 15 minutes, allowing the flavors to meld together.

Once the curry has thickened slightly, add the pineapple chunks to the pan. Stir well and let it simmer for another 5-10 minutes until the pineapple is heated through.
