Today’s Unique Creation: Pistachio-Crusted Salmon with Blood Orange Glaze

I’m excited to share with you a dish that combines the richness of salmon with the nuttiness of pistachios and the tangy sweetness of blood oranges. It’s a perfect balance of flavors that will surely impress your taste buds.

For this recipe, you’ll need the following ingredients:

  • salmon fillets (500g)
  • pistachios (100g, shelled)
  • blood oranges (2)
  • brown sugar (50g)
  • balsamic vinegar (50ml)
  • fresh rosemary (a few sprigs)
  • olive oil
  • salt
  • black pepper

To make this dish, you’ll need the following kitchen tools:

  • food processor
  • baking sheet
  • saucepan

Start by preheating your oven to 180°C and lining a baking sheet with parchment paper. Place the pistachios in a food processor and pulse until finely ground. Season the salmon fillets with salt and pepper, then press the ground pistachios onto the flesh side of the fillets.

Place the pistachio-crusted salmon on the prepared baking sheet and bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and the pistachio crust is golden brown and crispy.

While the salmon is baking, prepare the blood orange glaze. In a saucepan, combine the juice of the blood oranges, brown sugar, balsamic vinegar, and a few sprigs of rosemary. Bring the mixture to a simmer over medium heat, stirring occasionally, until it thickens into a glaze-like consistency.

Once the salmon is cooked, drizzle the blood orange glaze over the pistachio-crusted fillets. Serve hot, garnished with extra rosemary sprigs for a touch of freshness.

The total weight of the cooked dish is approximately 750g, with 4 servings at around 187g per serving. Each serving is estimated to contain 350 calories.

A clever tip for this dish is to sprinkle some extra crushed pistachios on top of the glazed salmon for added crunch and visual appeal.

I hope you give this unique pistachio-crusted salmon with blood orange glaze a try. Feel free to experiment with the ingredients and make it your own. Enjoy!
