Tropical Dragon Fruit Coconut Soup

Introduction:

Today, I’m excited to share a unique dish that was inspired by a recent trip to a tropical island. The flavors and aromas of the local cuisine left a lasting impression on me, and I couldn’t wait to recreate a taste of paradise in my own kitchen.

Ingredients:

  • dragon fruit (150g)
  • coconut milk (200ml)
  • lemongrass stalks (2)
  • lime juice (from 1 lime)
  • red chili pepper (1, sliced)
  • fresh ginger (50g, sliced)
  • fresh cilantro leaves (for garnish)

Kitchen Tools:

  • chef’s knife
  • cutting board
  • blender
  • saucepan
  • fine mesh strainer

Preparation:

Start by peeling the dragon fruit and cutting it into chunks. In a blender, combine the dragon fruit chunks, coconut milk, lemongrass (bruised), lime juice, sliced chili pepper, and ginger. Blend until smooth.

Pour the mixture into a saucepan and bring to a gentle simmer over low heat. Let it simmer for about 15 minutes to infuse the flavors. Remove the lemongrass stalks and strain the mixture through a fine mesh strainer to remove any fibrous bits.

Serving:

Pour the soup into bowls and garnish with fresh cilantro leaves. Serve hot for a comforting and exotic twist on a classic soup.

Tips:

For an extra burst of flavor, try adding a splash of fish sauce or a dollop of coconut cream before serving.
